This makes a great side to a leafy salad, vege patties or if you are feeling lazy like I was, add it to your sushi!


Ingredients:

  • 2 medium sized orange kumara (sweet potato) – I find the orange variety works best as I leave them crunchy
  • 2Tbsp coconut oil
  • 2 tomatoes diced (I have also successfully used a zucchini instead)
  • A handful of diced shallots

  1. Preheat the oven to 175°
  2. Chop the kumara up in into small cubes
  3. Put 2 Tbsp of coconut oil onto a baking dish and add the kumara
  4. Cook for 15 minutes in the oven (the kumara will still be crunchy)
  5. While the kumara is cooking, dice the tomatoes and shallots and put in a bowl
  6. Add the cooked kumara
  7. Mix avocado dressing through the salad
  8. Serve as a side
