This makes a great side to a leafy salad, vege patties or if you are feeling lazy like I was, add it to your sushi!
- 2 medium sized orange kumara (sweet potato) – I find the orange variety works best as I leave them crunchy
- 2Tbsp coconut oil
- 2 tomatoes diced (I have also successfully used a zucchini instead)
- A handful of diced shallots
- Preheat the oven to 175°
- Chop the kumara up in into small cubes
- Put 2 Tbsp of coconut oil onto a baking dish and add the kumara
- Cook for 15 minutes in the oven (the kumara will still be crunchy)
- While the kumara is cooking, dice the tomatoes and shallots and put in a bowl
- Add the cooked kumara
- Mix avocado dressing through the salad
- Serve as a side
