All I can do is apologise in advance lol. These are such delicious brownies, rich, dense, with chunks of chocolate through them. They are low carb and designed to keep insulin low to remove the barrier to metabolising fat. They are also full of good fats to support leptin your satiety hormone that also speeds up your metabolism. Treat yourself guilt free!

  • 200g grass fed butter
  • 3 tbsp erythritol
  • 3 tbsp cacao
  • 1 tsp vanilla extract
  • 1 pinch Himalayan salt
  • 2 eggs
  • 2/3 cup almond meal
  • 1 tsp baking powder
  • Optional: 100g dark choc chips (I use Lindt 90% dark chocolate block, broken into small ‘chips’)
  • Optional: Handful of walnuts or macadamias

  • Melt butter in saucepan, and then dissolve erythritol by stirring into butter.
  • Transfer butter to mixing bowl and stir in cacao and vanilla.
  • Add egg and beat to combine all ingredients.
  • Add almond meal and baking powder and stir to combine.
  • If using choc chips, fold through mixture.
  • You could also add in chopped walnuts or macadamias if you like.
  • Pour into small baking tray and bake for 20 minutes on 160 degrees C
